Food doesn't reach every part of your digestive tract at once. It moves through the stomach, small intestine and colon over many hours, and symptoms can be generated at different stages. Something that ferments in the colon, for instance, may only cause gas and bloating well after the meal that carried it there. Because transit time varies from person to person and day to day, the same food can produce symptoms at noticeably different delays.
